Hey,
Yes, that’s the way I really greet people because I’m from the southeastern US and that’s just what’s done. I’ve undertaken this both as a way to learn to blog and a way to hold myself accountable for getting back into shape. Like any self-respecting southern woman,I am a phenomenal cook. I don’t measure anything, and you know what that means…I learned to cook by taste. I don’t cotton to the idea of insulting a guest by serving a meal that is less than mouth-watering. And, last but not least, I have the backside to show for my hospitality. My saving grace is that I swim laps…lots and lots of laps…and while we all learn about the DASH Diet, we’ll also be learning about the every-day differences that can be made in your life if you just start moving. Oh yea…one more thing, I have a 14 year old son, a dog, a boa constrictor, way too many cats and a job that no one in their right mind would seriously consider keeping, but that I happen to love, so we’ll be examining the very real obstacles to twenty-first century single mothers with computers instead of dates getting back into life and back into shape. I hope you decide to come along for the ride! I promise NEVER to tell you the truth about my weight, because then I’d have to shoot you, but always to tell you the truth about losses and gains and the struggle to balance the fact that I deserve a hot body and a healthy heart, but realistacally, mothers are pretty much completely utillitarian…we serve a pur pose and we BETTER serve that purpose if we know what’s good for us.

Day 1…So far, all I’ve done is to start planning and writing. The insane job is at a home for status-offending girls and we took a group of them skating tonight. We were celebrating February birthdays, and there was birthday cake served. There were also grapes. I looked at the table and thought about how sweet those grapes looked. I’m not joking…I looked at pretzels, cake, and two different candies and wanted grapes. As I polished off most of a bowl of them, I realized that I’m growing up nutritionally. I ate the healthier choice and I didn’t feel robbed. I felt like grapes are wonderful and I don’t want birthday cake butt and pretzel high blood-pressure. I felt like I could do this.

Happy Thanksgiving to all of our Canadian Friends in and out of the Blogosphere.
Thanksgiving is one of the traditional holidays where those who have hypertension have problems keeping on any diet successfully as we all tend to think of that Turkey dinner high in calories, sodium and fats. Welcome to the DASH Diet friendly thanksgiving Dinner.
Creating a Successful thanksgiving dinner using the Dash Diet principle is not difficult when you remember that with the Dash Diet requires that you eat lots of vegetables, fruits, lean meats, fish, poultry, low fat and nonfat dairy, bean and nuts, and whole grain.
Here are just a few tips to help make your thanksgiving a Dash Diet Success:
* Make a low fat gravy by using a skimmer cup to remove most of the fat from the turkey drippings. Make your gravy high flavor by first sauteing onions or shallots along with minced garlic. Add red wine, and boil to burn off the alcohol, while leaving great flavor. Add the skimmed meat drippings. Use instant flour to thicken the hot gravy.
* Mashed potatoes and sweet potatoes are great sources of potassium, one of the key DASH diet nutrients. Use skim milk and light margarine for mashing.
* Cranberry sauce is a great source of antioxidants, which are great for your heart.
* If you are eating at a family or friends home, bring a vegetable dish or vegetable appetizers, so that you can be sure to have a healthy dinner.

The DASH Diet is an ideal way to help the environment as it recommends less meat and in fact encourages more protein sources coming from fish, poultry, legumes and nuts.

People should have one meat-free day a week if they want to make a personal and effective sacrifice that would help tackle climate change, the world’s leading authority on global warming has told The Observer…….
Pachauri, who was re-elected the panel’s chairman for a second six-year term last week, said diet change was important because of the huge greenhouse gas emissions and other environmental problems - including habitat destruction - associated with rearing cattle and other animals. It was relatively easy to change eating habits compared to changing means of transport, he said.

Nectarine Trivia Fact:
To speed up the ripening process, place hard nectarines in a paper bag with an unripe banana.
NECTARINES
A nectarine is a fuzz less variety of peach. It is NOT a cross between a peach and a plum.
Nectarines, like peaches, probably originated in China over 2,000 years ago and were cultivated in ancient Persia, Greece and Rome. They were grown in Great Britain in the late 16th or early 17th centuries, and were introduced to America by the Spanish.
The word ‘nectarine’ means sweet as nectar, and this is very likely the obvious origin of the name.
Today, California grows over 95% of the nectarines produced in the United States.

To have success in the DASH Diet and your health, you need to remember that vegetables including carrots are very important. Here are is a guideline for eating vegetables.
Vegetables
One serving equals:
- 1 cup raw leafy vegetables
- 1/2 cup cooked vegetables
- 6 ounces vegetable juice
Good choices include:
- tomatoes
- carrots
- squash
- broccoli
- turnip
- greens, like collards, kale, and spinach
- artichokes
- beans, including green beans and lima beans
- sweet potatoes
- potatoes

Black-eyed peas are not peas. What are they?
A: Beans
Hearty Black-eyed Peas
Prep: 10 min.; Cook: 1 hr., 35 min.
Ingredients
3 cups low-sodium chicken broth
3 cups water
1 medium onion, chopped
1 smoked ham hock
1 bay leaf
1/2 teaspoon pepper
4 whole jalapeño peppers (optional)
1 (16-oz.) package dried black-eyed peas
1 teaspoon salt( lite Salt)
Preparation
1. Bring first 6 ingredients and, if desired, jalapeños to a boil in a Dutch oven; cover, reduce heat, and simmer 30 minutes.
2. Rinse and sort peas according to package directions. Add peas and 1/2 tsp. salt to Dutch oven, and cook, covered, 1 hour or until peas are tender. If desired, remove meat from ham hock, finely chop, and return to Dutch oven. Season with remaining 1/2 tsp. salt or to taste.
Yield
Makes 4 to 6 servings

Success for Health has been an ongoing pursuit for many people for many years.
Of all the countries in the world Americans are obsessed with dieting for many reasons, especially for weight loss.
People will try the latest diet appearing in popular magazines, being discussed on talk shows and displayed on the shelves of their local bookstores.
People look for success in their health as in quick results, easy to implement and will listen to the hype and claims of remarkable improvementts.
